Natural Special Prep
This “Special Prep” lot—often referred to as “Premium” by producers in Ethiopia—is crafted with exceptional attention to detail. The cherries are carefully selected from a small network of dedicated smallholder farmers.
For this lot, around 90% of the cherries are perfectly ripe, showcasing that deep, ideal red color. The remaining 5% are slightly underripe and 5% are overripe, creating a balance that still leans heavily toward optimal ripeness.
These cherries are processed and stored separately from standard lots, ensuring traceability and maintaining the high quality of the selection. Due to the precision and selectivity of this method, only a small number of bags are produced each year.
Typically, the cherries used in these special lots are harvested from a single day’s picking, known as a day lot, which helps preserve consistency in flavour and quality.
Once harvested, the natural process begins. The cherries are first sorted by ripeness and quality, then rinsed clean before being placed on raised drying beds or tables. During drying—which takes between 8 to 25 days depending on the weather—the cherries are regularly turned to ensure even airflow and to avoid over-fermentation or mold.
The result is a meticulously produced natural coffee that reflects both the skill of the producer and the richness of Ethiopia’s coffee-growing tradition.
